In September 2021, Mad Marvlus and Tilted Shed decided to collaborate on the creation of cider with some very special fruit: 1 ton of Asian pears and apples organically-farmed on the ancestral lands of Coast Miwok and Southern Pomo People in Sonoma County, California at an Afro-indigenous farm called EARTHSeed. Initially, we fermented the apples and Asian pear blend separately in neutral French oak barrels then combined them as they were finishing fermentation dry as possible. Next, we added a small amount of raw wildflower honey from Sonoma County Bee Company to help add flavor, body, and kickstart fermentation to create its effervescence. We slowly infused the cider with fresh pink jasmine we foraged for throughout Sonoma County. We bottled it in February 2022. Unfined. Unfiltered. 20ppm SO2 added.
